Tuscan White Bean Soup
Ingredients

1# Dried Cannelini Beans
2 qt. Chicken Broth
1 qt Water
8 oz. Bacon
1 sm. Onion
1 ea. Pickled Jalapeno
2 oz. Mild Green Chilies
3 cups Whipping Cream


Directions

Soak the beans in water overnight.

Drain the beans and boil in the water and chicken broth.

In a frying pan render the diced bacon and add the onions.

Continue to cook until the onions are translucent.

Add the bacon & onion mixture to the boiling beans.

The beans will boil for about one hour.

Dice the jalapeno and the chilies and add to the cooked beans.

Finish the soup just before serving with the cream.
