Pan-Seared Filet & Crab with Caramelized Onion Sauce
Yield: six servings

Ingredients

FILET
6ea. - 6oz. Filet mignon
Pinch - Salt & Pepper

CRAB
12oz. - Lump Crab Meat
3oz. - Bread Crumbs
1ea. - Egg
1tsp. - Old Bay Seasoning
Pinch - Salt & Pepper

CARAMELIZED ONION SAUCE
1ea. - Small Onion
16oz.- Heavy Cream
Pinch - Salt & Pepper


Directions

Mix the crab ingredients and portion into 3 oz. Cakes

Dice the onion and place into a very hot skillet

When the onion turns brown add the cream and let this simmer
until it reduces by half

Season the sauce with salt and pepper

In a hot pan sear the meat on each side till dark brown
and finish in the oven to the desired temp.

In another pan with a little oil cook the crab cakes for 2-3 minutes on each side.

For assembly top each steak with a crab cake and coat with the onion sauce
