Our hands-on cooking classes teach many culinary secrets under the tutelage of our professionally trained chef.  Participants enjoy sampling of the tempting dishes prepared during their vacation cooking school curriculum.

Epicurean Escapade

...is our two day intense, hands-on cooking classes creating a multi-course meal from scratch. Participants will spend several hours each day working alongside our chefs to create from scratch, a multi-course meal based around a central theme or ingredient.  Class participation is limited to six adults, so that there's plenty of time for questions and exploration, and so that the material can be enriching for experienced cooks and accessible to the enthusiastic novice.

Pastamania

Master the time honored are of Italian pasta making during our pasta-mania cooking class. If you have flour and water, you can make pasta.    Hands on classes that teach the art of making homemade pastat easily and successfully.  You will be creating such iconic pasta’s as Tortellini and Agnolitti.
Dishes created
•    Roasted Beet AGnolitti with Spinach, Roasted Onions, Mushrooms topped with a Creamy Egg Emulsion Sauce.
•    Goat Cheese and Mushroom Tortellini with Bolognese Sauce

The Art of Risotto

Making Perfect Risotto can be very intimidating.   In our Art of Risotto class you will learn the different between chef’s Risotto versus Cookbook risotto.  Learn the tricks of the trade for the creamiest risotto you will ever made.  Our chef will lead you in the creation of the greatest risotto dishes that will keep your mouth watering.  You will create each dish from scratch including the stocks.
Dishes created:
•    Mushroom Risotto made with Mushroom Stock, Montasio and Pesto
•    Crab Risotto made with Vegetable Stock, Spinach, Cherry Tomatoes and Montasio, finished with Gremolata.

Me Make Sausage--- Impossible!

Ever had a hankering to learn the art of sausage making.  Homemade sausage is an exceptional experience that will get you to make you own sausage all the time.  In fact make it a family affair and have sausage making parties for the holiday season or just for the freezer.   Our chef will guide you through each step and give you the trips of the trade.  The possibilities for flavors and seasonings is unlimited.

•    Pork Sausage Bolognese Gnocchi  ( Pre-Made0
•    Bratwurst with Roasted Potatoes, Seared Broccolini with Onion Madeira Sauce

Breaking it all Down, Down, Down

Time to learn the art of saving money and buying that whole chicken or turkey, breaking it down and using up all of it with zero waste.  This class will focus on the breakdown of products such as chicken and various vegetables using the scraps for maximum use such as stocks, jus and using the same vegetables on different dishes.  Who doesn’t lover saying money and not creating any wasted food.

Dishes Created:
•    Braised Chicken Thighs and Paella
•    Seared Chicken Breast with Stuffed Cabbage( Eggplant Farce), Honey Glazed Carrots with Chicken Jus.

"My husband and I have nothing but gratitude and thanks for you and your entire staff for the hospitality extended to us this past weekend.  We loved the Manor!  We felt at home the moment we arrived.  Everyone was gracious in whatever task they performed on our behalf.  As this was my husband's first outing in well over a year, he was very happy to sit in front of a fire with a book and just enjoy relaxing while I enjoyed my cooking class with Executive Chef.  Wow! This far exceeded what I had imagined it would be.  I learned so many things throughout both days and the.
